Eating healthy isn’t as easy as I thought it would be at the first of the year. Sometimes you think you are eating something that is healthy and then when you research it, you find out it either has high carbs, high sugar, or both. I have been very diligent in researching what I am eating now and when I found these Orca Bay Seafood fillets, I knew this was going to solve my dinner dilemma.
There are so many choices of fish, from salmon to halibut to flounder and so much more. I am not the best when it comes to cooking fish so I was nervous about trying a product I had never had before. But with Orca Bay, I have a different choice of fish for every night of the week, and what is great is that on the Orca Bay website, you can find easy to create healthy recipes like the one below.

1 package Orca Bay Cod Fillets
1 clove garlic, minced
1 teaspoon thyme
1 teaspoon lemon peel, grated
salt and black pepper
1 teaspoon minced green onion
1/4 cup Italian bread crumbs
1 tablespoon egg whites
1 tablespoon lemon juice
thyme for garnish
Preheat oven to 350 F. Prepare a baking pan with cooking spray. In a mixing bowl, combine garlic, thyme, lemon peel, salt, pepper, onion, and bread crumbs. Stir in egg white and mix well.
Pat dry the thawed cod fillets. Place cod in pan and brush with lemon juice. Spread crumb mixture over the top of each fillet, pressing lightly to adhere. Drizzle the crumb coating with a dash of melted butter. Bake until the fish barely flakes, about 15 to 20 minutes. Garnish with thyme and serve.
