The change of colors and the cooler weather is a welcomed sign that fall is coming and the flavor of pumpkin spice is everywhere, but you don’t have to spend a fortune to enjoy that wonderful flavor, you can create your own Pumpkin Spice cupcakes, donuts and cocktails right at home. And how fun is it to decorate for fall while drinking and eating the yummy spices of the season. I created these treats and drinks for you to try in your home, hope you enjoy, I sure enjoyed making, eating and drinking them myself. As always, remember to get creative and have fun.
Pumpkin Spice Cupcake
Yellow Cake Mix or Pumpkin Spice Muffin Mix
1/3 cup of vegetable or canola oil
1 Cup (8oz) of Pumpkin Spice brewed coffee
½ Teaspoon Pumpkin spice (I used McCormick brand)
Wilton baking cups, regular and mini
Preheat the oven to 350 degrees. Mix the yellow cake mix, 3 eggs and 1/3 cup of oil with a mixer for about 30 sec. Add the cooled pumpkin spice coffee and mix for an additional 2 minutes. You can make mini cupcakes or regular sized cupcakes; I like to make both when I am baking. Place the Wilton baking cups into the muffin pan and fill the cups ¾ of the way full, this is true for the regular size or the mini size. Bake the mini cupcakes about 10 minutes; check them with a toothpick to be sure they are done. Bake the regular sized cupcakes for about 20 minutes; again, using a toothpick to be sure they are fully baked. Let them cool at least an hour.
4 ½ Cups of confectioners’ sugar
½ Cup of butter
½ Teaspoon of Wilton Treatology Cinnamon and Graham Cracker
1 Teaspoon of vanilla
5-6 Tablespoons of Harvest Blend coffee
Wilton designer tip of your choice
Wilton Cake Decorating Bags
In a mixer, place the butter, confectioners’sugar, Wilton Treatology Cinnamon and Graham Cracker flavoring, and vanilla. Blend completely. Add the brewed and cooled coffee 1 tablespoon at a time; you may need more then 6 tablespoons. Assemble your cake decorating bag with the tip. Once your frosting peaks, place it in the decorating bag. Now have fun decorating your cupcakes, finish them off with a little sprinkle of nutmeg on top.
Pumpkin Spice Cocktail
Keurig 2.0 Brewing System
4 oz. Pumpkin Spice coffee
¼ Cup Pumpkin Spice Kahlua
¼ Cup cold or warm milk
Sprinkle of Nutmeg
Brew 4 oz. of the Pumpkin Spice coffee. Add the Kahlua and milk. Add whip cream to the top and sprinkle the nutmeg on top.
Pumpkin Spice Donuts
Wilton donut pan
Wilton cake decorating bag
2 Cups flour
2 Teaspoons baking powder
½ teaspoon salt
½ Cup packed brown sugar
2 Teaspoons pumpkin pie spice
½ Teaspoon baking soda
1 Cup canned pumpkin
½ Cup milk
¼ Cup unsalted butter softened
¼ Cup Powdered sugar
2 – 3 Tablespoons Autumn Harvest Blend coffee (I brewed it at 4 oz.)
First, preheat the oven to 325 degrees. Spray the donut pan with the non-stick spray and set aside. In a mixer, mix flour, baking powder, salt, brown sugar, pumpkin pie spice, and baking soda. Add the eggs, canned pumpkin, milk and butter. Mix on low until the batter is fully mixed and slightly sticky. Fill the Wilton cake decorating bag with the batter and fill the donut pan holes half way. Bake 10-12 minutes checking with a toothpick to see if they are done. Place the donuts immediately on a wire rack to cool.
Once the donuts are cooled, mix the powdered sugar and the coffee together to make a glaze. Drizzle the glaze over the donuts and sprinkle the cinnamon on top.
